Croquembouche
Croquembouche is the traditional French wedding cake made from filled choux pastry shells joined together with sugar syrup that is heated to 154 degrees celcius. The choux pastry can be filled with either fresh cream or a custard cream and flavoured with liqueur. Our most popular filling is a custard cream flavoured with coffee and Tia Maria. Croquembouche MUST be made and eaten on the same day and are made by 2 pastry chefs working as a team. In recent years, these have become popular for birthdays as well.

We can make heart shaped cakes in fresh cream sponges, black forest cakes, torte, Mud cakes, Madeira cakes or fruitcakes. Prices depend on the type of cake you choose and the decoration. Here are 3 examples of how we can decorate them and the prices for these options.

There are 2 examples of our tiered round cakes. One has cakes doubled up to get extra height. Covered in RTR icing and decorated with royal icing. Prices below are for the higher option. The other cake is an 8 inch round with a 10 inch round and costs $250.00.

Mud cakes
A mud cake is a rich chocolate butter cake that is covered in a chocolate ganache. The ganache is made using chocolate coverture and Pure fresh cream. They are suitable for Birthdays, Engagements, Anniversaries, Weddings or any special occasion. We recommend serving mudcake with cream. Cost depends on sizes chosen and style decorated.
